Pumpkin Cheesecake Roll

Baked Potato Soup

6-7 Really Big Baking Potatoes
2-3 Cups finely shredded Cheese (your preference)
1 lb Thick Bacon cooked (save some bacon grease)
1/4 Cup bacon grease
2 bunches Green Onions (scallions) chopped into bite size pieces
3-4 stalks Celery chopped
1 1/2 Cups milk (whole preferably) - nothing less than 2%
Salt (to taste)
Pepper (to taste)
Up to 3 tsp Summer Savory (spice)
2-3 Carrots peeled & sliced thin

Peel potatoes and cut them into bite size pieces. Put potatoes in a large pot and cover with about an inch of water.  Put pot on to boil.  Meanwhile, cut up bacon in quarters and fry in frying pan.  Place crisply cooked bacon on paper towel to drain. Save 1/4 cup bacon grease.  Once the potatoes are tender; leave water in pan and slightly mash the potatoes so they are still somewhat chunky.  You don’t want it to be too juicy.  Add summer savory, salt and pepper to taste.  Add celery and carrots.  Cook until tender then add green onions, bacon pieces and bacon grease. Continue to simmer until onions are tender.  The grease is like magic; after soup is done the grease will come to the top and can be easily skimmed off.  It really flavors the water.  Stir soup well.  Add cheese & milk 1/2 cup at a time, reserving some cheese for the top of the soup.  Enjoy! - Dorilyn Baker French

Thanksgiving @ Pershing Meadows in Lovelock, NV

The Salvation Army donated a 24lb turkey, stuffing, mashed potatoes and veggies to our tenants for our 7th annual Thanksgiving feast.  We had a good turn out for the pot luck and everyone had a great time.  We had 4 tenants that were home bound so a few of the other tenants made a plate of food and brought it to them.  They really look out for each other at Pershing Meadows! submited by Susan Provo, Manager

Yerington's Garden Rocks

WooHoo for Ann Marie, our staff, and our residents out in Yerington at Yerington Garden Apartments. For a complex with so many challenges (in respect to resident interaction) they have pulled together nicely with the motivation from Ann Marie and grown themselves a beautiful community garden. What a positive thing to accomplish! See the updated slide show and see how it's grown into an award winner.~ Missi

Labor Day

The first Labor Day in the United States was observed on September 5, 1882, by the Central Labor Union of New York.  It became a federal holiday in 1894, when, following the deaths of a number of workers at the hands of the US military and US Marshals during the Pullman Strike, President Grover Cleveland put reconciliation with the labor movement as a top political priority. Fearing further conflict, legislation making Labor Day a national holiday was rushed through Congress unanimously and signed into law a mere six days after the end of the strike.

Traditionally, Labor Day is celebrated by most Americans as the symbolic end of the summer.  Families with school-age children take it as the last chance to travel.  Labor Day marks the beginning of the NFL and college football seasons. NCAA teams usually play their first games the week before Labor Day, with the NFL traditionally playing their first game the Thursday following Labor Day.  The holiday is often regarded as a day of rest and parties. Forms of celebration include picnics, barbecues, fireworks displays, water sports, and public art events.   In Elko it is last day of the County Fair and Horse Races.

How ever you celebrate ~ have a great week-end!

Diabetes Facts

I'm not sure how many diabetics live in the village, but many of my friends have type 2 diabetes.  This is fairly common in the older population.  I have type 2 diabetes and thought I would share some of the things I've learned.  You are the center of a successful plan to improve your blood sugar.  You have to do this yourself.  There is no easy fix:
  • Monitor your blood sugar.
  • See your Health Care Provider regularly.
  • Plan your meals.
  • Take your medicine as prescribed.
  • Exercise as much as you can.
Following a diet plan also helps with weight loss.  The simplest diabetic diet is counting carbs.  One carb serving is 15 grams of carbohydrates.  Most men can set a goal of 4 to 5 carb servings a meal.  Most women can use 3 to 4 carb servings a meal.  Check the serving size of a food.  Count total carbohydrates.  Look for fiber rich foods.  Limit fat cholesterol and sodium.  -- Glenna @ Cimarron Village

Neighborhood Watch Programs @ Mahagony Court and Summit Crest - Thanks to John Wheeling

What is Neighborhood Watch?
In essence, Neighborhood Watch is a crime prevention program that stresses education and common sense. It teaches citizens how to help themselves by identifying and reporting suspicious activity in their neighborhoods. In addition, it provides citizens with the opportunity to make their neighborhoods safer and improve the quality of life.
Neighborhood Watch groups typically focus on observation and awareness as a means of preventing crime and employ strategies that range from simply promoting social interaction and "watching out for each other" to active patrols by groups of citizens.
Most neighborhood crime prevention groups are organized around a block or a neighborhood, and are started with assistance from a law enforcement agency. Participation is strictly voluntary with participants donating their time and effort to make their neighborhood safe. Many groups use street signs to show the presence of the program in the area to potentially deter would-be criminals.
All Neighborhood Watches share one foundational idea: bringing community members together to establish control of their neighborhoods and promote an increased quality of life that reduces the crime rate in that area. Involving community members in Neighborhood Watch programs decreases opportunity for criminals to commit crime; rather then attempting to change criminal behavior or motivation.
Today's Neighborhood Watch Program is an effective means of control and neighborhood cohesiveness. While not all of the programs in place today go by the same name they all accomplish the same goal: to bring community members together to decrease the opportunity for crime to occur.
What Neighborhood Watch Is Not.
Neighborhood Watch is not a vigilante program.  It is not intended for citizens to involve themselves in detaining suspects thereby putting themselves in danger. Participants should strive to be good witnesses; leaving the detention of criminals to law enforcement officers.
Neighborhood Watch is also not intended to pit neighbor against neighbor. If participants have problems with neighbors, they are encouraged to attempt cooperative resolution in a peaceful manner, neighbor to neighbor. If the issue(s) cannot be resolved in this manner, then other resources including law enforcement may be required.

Silver Sage @ Neil Road

"Silver Sage is a 58 unit new apartment complex located in a Southeast Reno neighborhood. NHD's participation in the project involved dedication of both Tax Credit Exchange and Tax Credit Assistance Program funds that were provided to the state through the federal stimulas law.  Originally planned for 38 units, an additional 22 units are being constructed because additional funds became available.  The Apartment is for senior tenants with incomes at or below 50% of the area median.  ... A part-time services coordinator will be employed on-site daily to assist tenants to "age-in-place and finacially independent." (NHD Reporter)
